Handmade with Heart – Dishcloths

My mom gave me the sweetest gift when we were at her house last week.  She gave me a set of dishcloths.  They are beautiful and I was tempted to not even use them.  I decided to go ahead and wash with them so that they’d be out and with us instead of in some closet somewhere, forgotten.

There is something about homemade gifts that are so special.  You know the person took time from their schedule to work on the gift and thought of you while doing the project.

I cried in Walmart

These girls have a bond that is deeper than I will ever understand.  I am so thankful for our big girl Kayla.  She is the extra hands I have prayed for, the apple of Bekah’s eye, and an unbelievably unselfish girl.  I stop and watch, every so often, the two of them “talk”.  It’s something quite amazing.  Kayla takes Bekah’s hand and just talks with her…going along as if Bekah were talking right back.

On this trip to Walmart, Kayla was pointing out all the interesting colors and shapes of the fish.  Bekah was just grinning and soaking it all in.  The best part is that this flows out of deep love and commitment, not some duty or chore.

Kayla has had to grow up too fast in some areas in her life.  She’s had to endure neurology appointments, swallow studies, and hours in the car going back and forth to therapies.  But yet, I see how she adores her sister and her sister adores her right back.

Thank you Lord for giving us our two girls.  Thank you for linking them together for life.  I pray that you will protect this bond.  May Kayla run to You when she needs a confidant, a strong tower, and a new portion of light.

The Star of the Veggie Box (Cheesy Corn Pudding)

During the Spring and Summer months, I purchase a produce box from a local farm.  They have put together a CSA (community supported agriculture) group of people who are interested in local and organic foods that are in season.  To find a local CSA, enter your zip code in a site like this one.  The food has been amazing.  I want to thank Sasha Johns (whom you can read more about over here on Middle Places) for introducing me to Riverview Farms.  This particular week we got gobs of corn.  We    L  O  V  E    sweet corn.  I think it is good raw, grilled, boiled, roasted, in soup, in chili, in salad, you name it, I love it!

One of our boxes this Summer.  There’s corn, tomatoes, onions, garlic, potatoes, blueberries, cucumbers, and peppers in there!!  Oh my, yes!

A tall stack of ears to shuck.  I bring a knife and a cutting board out to the back porch with me to do this job.

This little green guys is the reason why I bring the knife and cutting board.  He’s harmless enough.  I just whack the end off with my big knife and chuck that part over into the woods.

Most of this batch of corn will go into the freezer.  I do a quick blanch and then strip the corn off of the cob.  Chris found the green contraption for me at the General Store in Greenville, SC.  It holds my freezer bags upright for me so that I can measure and load in my produce.  I love it!

 

So, once my produce is in the freezer, it waits for the perfect recipe.

Why not try this one for an upcoming family meal.  I got this recipe from my mom who got it from a co-worker years ago.  My husband and oldest daughter love corn as much as I do, so this has become a favorite.

Warning: This recipe does take some time to prepare and bake.  Not a “throw together” dish for a quick dinner meal.

Cheesy Corn Pudding

Prep Time: 10 minutes (Last time I made this, it sure seemed like A LOT longer. And, it makes A LOT of dirty dishes.)

Cook Time: 55 minutes

Serves: 8-10 adults

“This is my take on my step aunt’s corn pudding.  I added in Gruyere for nuttiness and onions for sweetness.  The whole thing is lightened up by separating the eggs and folding in beaten egg whites.” ~ Mrs. Aida

Ingredients:

3 tablespoons unsalted butter, plus more for coating your dish

2 medium garlic cloves finely chopped

1/2 white onion, finely diced

salt and freshly ground black pepper

3 large eggs

1 cup half-and-half

1/4 teaspoon ground nutmeg

3 cups fresh or defrosted frozen corn kernels

1 cup shredded Gruyere (about 4 ounces)

1/4 cup all-purpose flour

Directions:

Preheat the oven to 400 degrees F and arange an oven rack on the bottom rim.  Coat a 2-quart baking dish with butter and set aside.  Bring a lage pot of water, over low heat to a simmer.

Melt 3 T butter in a medium frying pan over medium heat.  When if foams, add the garlic, onions, salt, and black pepepr.  Cook until softened, about 5 minutes.  Set asisde to cool slightly.

Meanwhile, separate egg yolks and whites.  In a large bowl, whisk the egg yolks, half-and-half and nutmeg together.  Stir in the corn, cheesse, and cooled onion mixture.  finally mix in the flour and combine well.

Beat the egg whites until they just hold onto the whisk (soft peaks).  Stir in about 1/3 of the whites into the batter, then gently fold in the rest of the whites.  Turn the batter into the prepared dish and set the dish inside a roasting pan or larger baking dish.  Fill the roasting pan halfway with the simmering water and put in the oven.  Bake until the pudding is golden brown and set in the center, about 30-45 minutes.  Serve warm.

Forgiveness, Friends, Fruitfulness

While there are some days where I jump right out of bed

and grab a cup of coffee on my way to the shower.

It seem like more often, lately, I have been stumbling around

just trying to find the coffee pot!

With just a little yellow…

I am always amazed on September 30th.  It is not a national holiday.  It is not anyone’s birthday.  The date never even held significance for me until a few years ago.

September 30th is Microcephaly Awareness Day.  This date is important to me because our daughter Bekah has a condition known as Microcephaly.  My husband writes, “A little over four years ago, our course was forever altered. Rebekah was born and, though we wouldn’t know it for a few more months, we were thrust into this world of special needs. Microcephaly affects over 2% of the population and yet very few know it even exists (we didn’t until we found out Bekah has it). Today, we and many many friends (some who we would never have known without Bekah to open those doors) wear yellow to support her and raise awareness of Microcephaly.”

Bekah has many diagnoses and certainly Microcephaly is not the most dramatic of them.  It is the first diagnosis that we received though, and so we’ve chosen to help raise awareness.

Around the time of Rebekah’s birthday, I begin asking friends and family to wear yellow (the color of Microcephaly Awareness) and to tell at least one person about Bekah and her friends on September 30th.  Every year, I am amazed by who participates and just how many notes and pictures we receive.  Of course, my mother and Chris’ parents participate and all our Aunties are so gracious to wear yellow even though it is not a color that looks great on any of us. But, I am just floored by the folks I’ve never met personally, parents who plan their children’s outfits for this day, and people who purchase clothing just to participate. And then there are the ones who sent personal notes, text messaged, gave Bekah a shout out on FaceBook, messaged from vacation, and even dedicated a song to Bekah.

And so, you see, that by wearing yellow, by telling one person about Rebekah, by however you participated in Microcephaly Awareness Day, you are not just appeasing a mama’s wishes.  You are a bearer of God’s love.  This journey we have been on for the last four years has not been easy. But God stepped in and strategically placed people in our lives to remind us that we are loved with just a little yellow.

It’s coming


My favorite time of year is coming.  I love the cooler weather, the crisp air, and the short evenings.  I love fires in the fireplace, rainy days, and wearing jackets.  I like the smell of burning leaves, the deep grey skies, and the excitement of upcoming holidays.

Kayla and I went out for some fun this afternoon and I found this little leaf in the parking lot.  I had to stop in the rain to snap this picture because the promise of things to come brought a smile to my face.

a Little Golden Book

Now that Kayla is older and a very good reader, it has been more fun to read with her at night. I can hear the influence of our hours and hours of reading that we, along with others, poured into her. She can now read to us at night and even enjoys taking turns reading pages. She even does silly voices just like we would when we read to her.

Last night we read about four little animals that went down the road, over the bridge, across the green grass, and up the hill, two and two. Do you know the story?

The man my daughters call “Dad”.

 

My husband is an amazing father who was thrown into the special needs world almost four years ago. It is not the life we wanted, but none the less, it is our life. Chris has accepted this life with grace and loving kindness. As a father to our two girls, he patiently loves them with a selfless, ever-deepening love. I couldn’t be more thankful for the man my daughters call “Dad”.

I have seen him lay down many hobbies, peripheral friendships, and once-in-a-lifetime opportunities all for the sake of our family. He amazes me every day with his tenderness and renewed strength.

Thank you Chris for deciding to stick it out.
Thank you for coming home to us every night.
Thank you for being the strong one when I am on the edge of breakdown.
Thank you for learning a new vocabulary and new positioning techniques.
Thank you for being the homeschool administrator, pharmacist, laundry specialist, maintenance and repair man, and my dreamboat all rolled into one.

Thank you for so many other things that I can’t seem to type right now because I can’t see through the tears.

I love you more than I’ll ever be able to tell you.
